Herb-Stuffed Amberfish With Toasted Garlic Butter Sauce

Baking whole fish not only makes for a delicious meal but also offers several benefits. Firstly, it preserves the natural juices and flavours of the fish, ensuring a moist and tender result. Additionally, cooking with bones and skin enhances the overall taste and nutritional value, providing essential minerals and omega-3 fatty acids. It also allows for easy presentation and – best of all – it is EASY!!!
Ingredients for Amberfish
- 2 pounds whole Amberfish from Trellis Seafood
- Salt and black pepper (to taste)
- 1 tablespoon onion powder
- 1/2 tablespoon garlic powder
- 1/4 teaspoon paprika
- 2 tablespoon Caribbean Green Seasoning
- 2 tablespoon avocado oil
- 1 lemon (sliced)
- 1/2 cup parsley
- 1/4 cup dill (optional)
- 2 cloves garlic
- 1 small red onion (sliced)
INGREDIENTS FOR GARLIC BUTTER SAUCE
- 3 cloves garlic (finely chopped)
- 1/8 cup parsley (finely chopped)
- 1/2 cup salted butter
- Avocado oil for sautéing
DIRECTIONS
1. Preheat the Oven
Preheat your oven to 205°C/400°F. Lightly oil a baking tray or line with parchment/baking paper.
2. Prepare the Amberfish
Rinse the Amberfish and pat dry with a paper towel. Cut 3 deep slashes through the flesh on both sides of each fish.
3. Marinate the Fish
Mix the salt, black pepper, onion powder, garlic powder, Bajan seasoning and avocado oil together in a bowl then rub the mixture onto the Amberfish. Be sure to put some marinade into the slashes and in the cavity.
4. Stuff the Amberfish
Layer the onion, garlic and lemon slices in the cavity of the fish then stuff the parsley and dill. Using kitchen string, make 2 or 3 ties around each fish to hold it together.
5. Bake the Fish
Place the fish on the prepared tray and bake for 20 minutes.
6. Toast Garlic Butter Sauce
While the fish is baking, heat the avocado oil in a pan over medium heat. Sauté garlic for 1 to 2 minutes until slightly golden. Add the butter to the pan and heat until completely melted. Once butter is melted, remove the pan from heat, add parsley and stir until well combined.
7. Serve
Pour the melted butter over the fish and broil in the oven for another 5 minutes. Remove from baking tray and serve.
