Description
Mahi mahi (affectionately known as dolphin) is one of the most popular fish on the island. It has a mildly sweet flavour and fairly firm texture and is very versatile. Mahi Mahi heads actually hold quite a bit of meat and are perfect for soups and stock.
Storage
Our vacuum-packed products can be frozen for up to 12 months and should not be thawed until they are ready for preparation.
Thawing Instructions
We recommend removing the product from the original packaging and allowing it to thaw in the refrigerator for approx. 6-8 hours.

Thawing
To thaw, we recommend removing the frozen product from the original packaging, putting it in a plastic bag that is not vacuum-sealable and placing it in a dish in the refrigerator for 8 to 12 hours.
For faster thawing, place the frozen packet a bowl of cool tap water for 30 minutes. If the item is not fully thawed in 30 minutes, open the packet to release the seal and allow air to enter the bag and continue the thawing process for a few more minutes.
Preparation
Consuming raw or undercooked meats, poultry, seafood, shellfish, or eggs may increase your risk of foodborne illness. We recommend cooking seafood to an internal temperature of 145°F.
