Crispy Panko Crusted Barracuda

1 pack TRELLIS barracuda fillets
1 cup flour
2 cups panko breadcrumbs (or 1 cup panko breadcrumbs mixed with 1 cup parmesan cheese)
2 whisked eggs (or 1 cup water)
1/2 tsp paprika
1 tsp onion powder
1 tsp garlic powder
1/4 tsp salt (adjust to taste)
1/4 tsp black pepper (adjust to taste)
1 tbsp Bajan green seasoning (optional)
oil for frying
Directions
Cut fish into four pieces and season with the salt, black pepper and half of the dry spices (paprika, onion powder, garlic powder). Rub with green seasoning as well if desired.
Mix flour with the remaining dry spices and a pinch of salt
Place the seasoned flour, whisked eggs (or plain water) and panko breadcrumbs in three separate dishes.
Coat each piece of fish with flour. Then transfer to the eggs (or water) and dip until evenly coated. Finally transfer to the panko breadcrumbs and coat evenly.
Heat oil over medium heat. Once the oil is hot, fry fish for 3 minutes on each side.
Remove fish from the oil and rest on paper towel or oven rack until ready to serve.
