Ingredients
1 pack of TRELLIS barracuda fillets
1/2 cup Parmesan cheese
1/2 cup Panko breadcrumbs
2 tbsp extra virgin olive oil
1 tbsp onion powder
1 tsp salt (adjust to taste)
1 tsp garlic powder
1 tsp paprika
1/4 tsp black pepper
Directions
Cut TRELLIS barracuda into 4 pieces and pat dry
Grind breadcrumbs in a coffee grinder for a few seconds until they resemble a coarse powder
Combine breadcrumbs, Parmesan cheese and spices in shallow dish
Form a well in the center of the spices then pour oil in the middle
Mix spices with the oil until crumbly. If the spices clump together, add more Parmesan cheese and breadcrumbs in equal parts and mix well until the cheese mixture has the consistency of a coarse powder. Place the seasoned cheese mixture into the coffee again and pulse for a few seconds if necessary
Press each side of fish into the seasoned cheese mix until evenly coated
Line air-fryer tray with parchment paper
Place coated barracuda fillets on lined tray and cook for 8 minutes at 390 degrees Fahrenheit.
